Citrus Salmon with Bok Choy

To all of the readers with a kitchen and car, you don't have to get stuck in the bland, boring, chicken for every meal cycle! Here's a recipe that is super flavorful, easy to make, and healthy.

Citrus Salmon with Bok Choy

Ingredients

1 Salmon Fillet

2 Cloves of Garlic

1/4 Cup of Mayonnaise

1 Lime

Wasabi Paste

Olive Oil

Salt

Pepper

Prep

Wash and dry all produce. Remove the end of the bok choy and separate it into individual stalks. Slice and separate the greens and whites of the scallion. Grate the ginger. Mince the garlic. Cut the lime into wedges.

Steps

1. Combine the mayonnaise, the juice of one lime wedge, a pinch of salt & pepper, a pinch of ginger, a pinch of garlic, and your desired amount of wasabi in a bowl and mix. Add water to give it a drizzly consistency.

2. Heat pan with oil. When at a medium heat, add all the garlic and ginger. After two minutes add all of the bok choy to the pan and a spoon of water. Cook until the leaves wilt and then set aside.

3. In the same pan, heat a drizzle of oil under a medium-high heat. Season salmon with salt and pepper and then place in the pan skin side down. Cook until skin is crispy and brown, for five to six minutes and then lower heat to medium and flip the salmon. Cook for another three to four minutes.

4. Serve the bok choy and salmon! Drizzle with the sauce made in step 1 and and lime wedge for garnish. Enjoy!

Optional: Serve over jasmine rice, serve with soy sauce, or garnish with scallions.
